Chutney #1- Rajasthani Lahsun ki Chutney

This Marwari chutney is served with almost every dish like roti, rice, snacks and etc. In Rajasthan, this lahsun chutney is prepared in every household with different versions and each version is tasty and delicious. The chutney is bright red in color, spicy, quick, and easy to make. Let’s prepare this basic Rajasthani chutney recipe:
Ingredients-
- Cumin seeds
- Garlic cloves
- Dried red chilies
- Red chili powder
- Salt, mustard seeds
- Water
- Oil
Recipe-
- Take a blender, add peeled garlic cloves (1 large bulb), dried red chili (5-6), red chili powder (2-3tsp), cumin seeds (1tsp), salt (as per taste), and water (6-7tsp) and make a smooth paste.
- Keep it aside after blending, now take pan (non-stick), heat oil in it.
- When the oil is hot enough add mustard seeds (1tsp).
- As crackling starts add the paste to the pan along with some water.
- Now gently stir it well and cook well on medium-low flame unlit it becomes thick and oil separates. To prevent it from burning, stir occasionally.
- Lahsun chutney is prepared, serve it in a jar.
You can serve this Rajasthani lahsun chutney with dal bati or bajre or makki ki roti or with any everyday meals too.
Chutney #2- Rajasthani Tamatar ki Chutney
Rajasthani tamatar ki chutney or tomato chutney is an authentic dish in Rajasthan. It is the simplest, quickest, and easiest recipe. With sweet, tangy, piquant, and spicy flavors, this chutney has the capability to lift up the flavors of sandwiches, stuffed parathas, and burgers. Let’s prepare this delicious chutney.
Ingredients-
- Tomatoes
- Olive oil
- Garlic cloves
- Mustard seeds
- Salt, onions
- White/brown sugar
- Garam masala powder
- Turmeric powder
- Red chili powder
- Dried red chilies
- Coriander powder.
Recipe-
- Take a pan heat oil in it then add mustard seeds (1tsp).
- When the crackling starts, add dry chili (2-3), chopped and peeled garlic (4 garlic cloves), and chopped onions (2 medium-sized). Sauté for 4-5 minutes.
- Add diced tomatoes (5-6 medium-sized) and sauté for 1-2 minutes.
- Now add red chili powder (1tsp), coriander powder (1tsp), garam masala powder (1/4tsp), turmeric powder (1/4tsp), salt (as per taste), and sugar (as per taste).
- Mix them well and let them cook for 15-20 minutes on low heat.
- Stir it from time to time so that chutney doesn’t stick to the bottom of the pan.
- When chutney is soft and pulpy, remove it from the heat and let it cool completely.
- Transfer it to a jar or bowl as it is ready to serve.

Chutney #3- Rajasthani Dahi Lahsun ki Chutney
This Rajasthani dahi lasun ki chutney recipe has a special place in Rajasthani marriages, you can find this chutney in almost every Rajasthani marriage. This recipe has the capacity to elevates the taste of any Indian meal and comes together in no time using basic pantry staples present in our homes. Here is how to make it.
Ingredients-
- Green chili
- Red chilli powder
- Black pepper
- Coriander seeds
- Cloves
- Cinnamon
- Cardamom
- Ghee
- Garlic
- Ginger
- Dahi (yogurt)
Recipe-
- Take coriander seeds (3tsp), black pepper (1tsp), cloves (7-8), cinnamon (small pieces), and cardamom (6-7) in a pan-1 and sauté for 2-3 minutes. Keep them aside.
- Take another pan-2, heat ghee (2tsp) in it, add garlic (20-25 cloves), sauté it for 2-3 minutes then add chopped ginger (50 gram) and green chili (6-7) and sauté for 4-5 minutes till light brown. Keep it aside and let it cool.
- Now, take pan-1, transfer all items to the jar and blend it well to make a fine powder.
- Now, take pan-2, transfer all items into a jar and blend into a smooth paste.
- Take dahi in medium or big size bowl, now pour the paste and powder in it and mix it well till everything gets mixed properly. Now add salt and red chili powder (as per taste) and mix them well.
- Take another pan heat ghee (2tsp), now pour the mixture you made above and stir it continuously on low-medium flame till ghee gets separated and starts to float.

Chutney #4- Burnt Garlic and Mint Chutney
Burnt garlic and mint chutney can be found in every household. It is high in flavor and taste. This chutney can be served with any possible Indian food. Let’s learn how to make this chutney by following the easy recipe.
Ingredients-
- Garlic cloves
- Fresh mint leaves
- Oil
- Black salt
- Ginger
- Green chilies
- Yogurt
- Lemon juice
- Salt.
Recipe-
- Take a pan and heat oil (1 tsp) in it. Add garlic (8-10 cloves), and sauté till light brown.
- Add black salt (1/2tsp) and stir fry till the garlic is completely brown.
- Take jar add fresh mint leaves (2 cups), ginger (1 piece chopped), green chilies (2 chopped) and the sautéed garlic. Add 2 tsp water and salt to it and blend into a smooth paste.
- Pour yogurt (1 ½cup) into the mixture and blend again.
- Now add some freshly squeezed lemon juice (1tsp) and salt to the paste.
- Sieve this mixture through a muslin cloth to get a smooth paste and serve chilled.
You can serve this chutney with dal roti, dal rice, or can use it in a sandwich or burger.
Chutney #5- Mango Sweet Chutney
Mango sweet chutney is a perfect combination of sweet-tart and can eat with all meals or snacks or even slathered on toast. This recipe is generally prepared in the summer season due to the availability of mangoes. So, let’s make it.
Ingredients-
- 1kg raw mangoes
- Chili powder
- Cumin powder
- Sugar
- Turmeric powder.
Recipe-
- Grate the raw mangoes.
- Add sugar (1 ½ kg) to grated mangoes.
- Now add chili powder (4tsp), turmeric powder (1/2tsp), and cumin powder (1tsp).
- Pour the ingredients into a bottle and cover it with a muslin cloth and keep it under the sun for 10 days.
- Once it’s done bottle the ingredients in airtight jar.
This mango sweet chutney tastes yummy with parathas.
